Crawfish And Sausage Jambalaya
- 1 lb. crawfish tails
- 1 lb. smoked sausage
- 1 c. chopped celery
- 1 medium onion, chopped
- 1 bell pepper, chopped
- 1 Tbsp. cooking oil
- 1 c. raw rice
- 12 green onions with tops, chopped
- 2 c. water
- 1 tsp. Worcestershire sauce
- 1/2 tsp. Tabasco sauce
- salt and pepper to taste
- 3 cloves garlic, minced
- Brown sausage in heavy pot.
- Remove sausage and drain on paper.
- Add celery, onion, bell pepper and garlic to pot and saute until tender.
- Remove from pot.
- Add oil.
- When oil is hot, add rice and stir until light brown.
- Add crawfish and cook for 3 minutes.
- Add sausage, vegetables, green onions, water, Worcestershire, Tabasco sauce, salt and pepper.
- Cover and simmer for 20 minutes or until rice is done.
- Serves 6.
