Apple Raisin Crisp
- FOR THE TOPPING:
- 1/2 cup organic oats
- 3 tablespoons organic brown
- sugar
- 1/4 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1 tablespoon organic butter
- or margarine spread
- 1 tablespoon local honey or
- agave nectar
- 2 tablespoons canola oil
- 2 tablespoons organic whole
- wheat flour
- FOR THE FILLING:
- 2 pounds firm, ripe apples
- cut into 1/4 inch slices
- 1 cup organic raisins
- 1 tablespoon lemon juice
- 1 tablespoon organic brown
- sugar
- 1/2 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1 teaspoon organic whole
- wheat flour
- 1/2 cup walnuts (or any nut of
- your choice)
- olive oil or cooking spray
- Preheat oven to 350 F. Coat an 8 or 9 inch baking dish with olive oil or cooking spray.
- Melt the organic butter or margarine spread and set aside. In a medium mixing bowl, combine the ingredients for the toppings; mix with a fork until crumbly and set aside.
- For the filling combine apples, raisins, walnuts, and lemon juice in a large mixing bowl. Add cinnamon, nutmeg, brown sugar, whole wheat flour and stir gently to combine.
- Transfer the apple raisin mixture to the coated baking dish, then cover with the topping. **Optional** For an extra crunch, sprinkle a handful of oats 1/8 teaspoon of cinnamon, and drizzle a little bit of honey over the top of the crumb mixture.
- Bake for 30-35 minutes or until the filling is bubbling and the topping is golden brown. Cool at least 15-20 minutes before serving.
