Apple Raisin Crisp

  1. Preheat oven to 350 F. Coat an 8 or 9 inch baking dish with olive oil or cooking spray.
  2. Melt the organic butter or margarine spread and set aside. In a medium mixing bowl, combine the ingredients for the toppings; mix with a fork until crumbly and set aside.
  3. For the filling combine apples, raisins, walnuts, and lemon juice in a large mixing bowl. Add cinnamon, nutmeg, brown sugar, whole wheat flour and stir gently to combine.
  4. Transfer the apple raisin mixture to the coated baking dish, then cover with the topping. **Optional** For an extra crunch, sprinkle a handful of oats 1/8 teaspoon of cinnamon, and drizzle a little bit of honey over the top of the crumb mixture.
  5. Bake for 30-35 minutes or until the filling is bubbling and the topping is golden brown. Cool at least 15-20 minutes before serving.
