Baked Fish, Tomaotes, And Onions Genova Style

  1. Pre heat oven to 350 F
  2. Heat 1/4 c olive oil in large skillet over medium heat
  3. Add onion and saute, stirring, until it begins to colour - about 6 min
  4. Add anchovies and garlic and stir and saute about 1 min
  5. Spread half the onions on an oiled bake dish.
  6. Top with tomato slices. Salt and pepper.
  7. Place fish on top in one layer.
  8. Top with rest of onions and then tomatoes.
  9. Sprinkle with parsley.
  10. Bake 30 min.
