Baked Fish, Tomaotes, And Onions Genova Style
- 1/3 cup olive oil
- 2 large onions, thinly sliced
- 3 anchovy filets, finely chopped
- 3 cloves garlic, finely chopped
- 2 pounds fresh roma tomatoes, sliced in 1/4 inch rounds
- salt and pepper
- 1 pound thick fish cut into 4 servings 3/4 inch thick
- 4 oz sea scallops
- 4 oz prawns
- 2 T chopped fresh parsley
- Pre heat oven to 350 F
- Heat 1/4 c olive oil in large skillet over medium heat
- Add onion and saute, stirring, until it begins to colour - about 6 min
- Add anchovies and garlic and stir and saute about 1 min
- Spread half the onions on an oiled bake dish.
- Top with tomato slices. Salt and pepper.
- Place fish on top in one layer.
- Top with rest of onions and then tomatoes.
- Sprinkle with parsley.
- Bake 30 min.
