Cherry Oat Scones
- 1 1/3 cup all purpose unbleached flour
- 1 cup rolled oats
- 1/4 cup sugar
- 1 tsp baking soda
- 1/4 tsp salt
- 1/4 cup (1 stick) unsalted butter at room temperature
- 1 egg slightly beaten
- 1 tsp lemon peel
- 3/4 cup plain yogurt or 1/2 cup buttermilk
- 1 1/4 cup dried cherries, or fresh berries such as blueberries, raspberries
- Preheat oven to 350F. Lightly grease cooking sheet.
- Combine flour, rolled oats, sugar, baking powder, baking soda, salt, and lemon peel.
- Cut butter into flour mixture. Add beaten egg, yogurt into flour mixture and blend thoroughly. Add dried cherries (or fresh berries) and mix until evenly distributed.
- Pat 1/2 of dough in a flattened circle on floured surface. Cut into wedges and place onto greased cooking sheet. Repeat for second half of dough.
- Bake 20-25 minutes.
- Serve with butter and jam.
