Wild Rice Salad

  1. Prepare rice
  2. simmer 30 minutes so it is slightly underdone- transfer to salad bowl
  3. cube the orange interior
  4. add grapes, ,scallions salt and pepper & dressing , mix let stand of 30 minutes all mixed up before serving.
  5. Add nuts at least minute so they don't get soggy
  6. Any chopped veggies (carrots celery)or fruit are good in this. I use Kiwis cubes, a firm peach is good too. Chopped Almonds or pecans are fine substitute for Hazelnuts-get them pre-toasted because soggy ones are not good. Roman Hazelnuts from Bristol farms).
  7. Add nuts at least minute so they don't get soggy

red wine vinaigrette, red wine, ubc, extra virgin olive oil, salt, whisk ingredients, salad ingredients, wild rice, scallions, hazelnuts, orange, grapes halved, salt, black pepper
