Strawberry Patch Muffins
- 1/2 cup (1 stick) butter, room temperature
- 1 1/2 cups sugar
- 4 eggs
- 1/4 teaspoon vanilla extract
- 1 cup + 3 TBSP powerded milk
- 2 TBSP + 1 tsp baking powder
- pinch of salt
- 5 cups cake flour
- 1 cup strawberry preserves
- 1 1/2 cups ice water
- Preheat oven to 350 degrees.
- Cream butter and sugar with an electric mixer at medium speed until smooth, about 5 minutes. Add eggs and vanilla, and mix for 5 more minutes.
- Sift powdered milk, baking powder and salt. Add to buuter and egg mixture and mix for 5 minutes.
- Add the flour a bit at a time, alternating with portions of 1 1/2 cups ice water, beating until smooth after each addition.
- Add preserves, beat for 30 seconds, just enought to mix.
- Pour into muffin cups. Fill almost full, and bake until muffins are golden and firm, about 20 minutes.
