Quick Sausage Cassoulet
- 1 1/2 lb smoked sausage
- 1 onion, chopped
- 3 strips smoked bacon, chopped
- 2 cloves garlic, minced
- 1 19-oz can white kidney beans, drained and rinsed
- 1 19-oz can tomatoes
- 2tsp chopped fresh rosemary
- salt and pepper to taste
- 1. Place a deep heavy bottom pot over medium-low heat.
- 2. Cook sausages until browned on all sides. Remove sausage from pan and allow to cool; slice into 1/4" thick medallions.
- 3. Add the onion and chopped bacon to the pot and saute until the bacon is crispy.
- 4. Add the garlic and cook until fragrant.
- 5. Return the sausage medallions to the pot and quickly saute, stirring constantly. Saute until the sausage is browned on all sides.
- 6. Add the beans, tomatoes and rosemary.
- 7. Bring the liquid to a boil then reduce the heat to low and simmer for 25-30 minutes.
- 8. Serve with crusty french bread.
