Quick Sausage Cassoulet

  1. 1. Place a deep heavy bottom pot over medium-low heat.
  2. 2. Cook sausages until browned on all sides. Remove sausage from pan and allow to cool; slice into 1/4" thick medallions.
  3. 3. Add the onion and chopped bacon to the pot and saute until the bacon is crispy.
  4. 4. Add the garlic and cook until fragrant.
  5. 5. Return the sausage medallions to the pot and quickly saute, stirring constantly. Saute until the sausage is browned on all sides.
  6. 6. Add the beans, tomatoes and rosemary.
  7. 7. Bring the liquid to a boil then reduce the heat to low and simmer for 25-30 minutes.
  8. 8. Serve with crusty french bread.
