Lucky Casserole
- 1 lb. ground beef
- 1 1/2 c. (6 oz.) shredded Cheddar cheese
- 1/2 c. dry bread crumbs
- 1/3 c. milk
- 1/4 c. chopped onion
- 1 egg
- 4 c. thin potato slices
- 1 (9 oz.) pkg. frozen cut green beans, thawed
- 1/3 c. flour
- 1 tsp. salt
- 1/8 tsp. pepper
- 1 (15 oz.) can tomato sauce
- 1/2 tsp. ground sage
- Combine meat, 3/4 cup cheese, crumbs, milk, onion and egg; mix lightly.
- Shape meat mixture into 24 (1 1/2-inch) balls.
- Combine potatoes, beans, remaining cheese, flour, salt and pepper.
- Place in buttered 11 3/4 x 7 1/4 x 1 3/4-inch baking dish.
- Combine tomato sauce and sage; pour half of sauce over potato mixture. Bake in a preheated 350u0b0 oven, 20 minutes.
- Place meat balls on potato mixture; top with remaining sauce.
- Bake 45 to 50 minutes or until potatoes are tender.
- Makes 6 servings.
