Savoury Pastry
- 1 c flour
- 1/2 c butter, chilled in pieces
- 1 tsp salt
- 1 egg
- 1 T cold milk
- Heap flour on a work survace and make a well. Put the butter, salt and egg in a food processor and pulse until butter is size of peas. Spoon the butter into the flour well and draw in flour little by little. Work dough delicately until it has a grainy texture. Add the milk gently with fingertips until the dough holds together. Knead the dough 4 - 6 times, wrap in plastic and refridgerate 30 min.
- On a lightly floured survace, roll out the pastry to fit pan. Lightly press into bottom and sides of pan, trim excess. Prick bottom of dough, cover, and refrigerate 20 min.
- Prebake the shell in preheated 375F oven. Line shell with parchment and fill with weights. BAke for 35 - 40 min until dry and lightly browned. Remove wts and coll on rack.
