Chicken Fajitas

  1. For spice mix
  2. Mix all ingredients in a bowl. Sufficient for 3 meals.
  3. For salsa
  4. Prepare the tomatoes by carefully cutting around the green stalk base and removing it. Now pull the loose skin, it will peel without much effort.
  5. Chop the Onion and grate the Garlic clove into a bowl, add the peeled Tomatoes.
  6. Mash contents of bowl with potato masher
  7. Add rest of ingredients. Stir.
  8. The meal
  9. Fry off chopped onion and peppers in a pan for 10 minutes.
  10. Add 1lb diced chicken breast
  11. Brown off chicken
  12. Add spice mix
  13. Stir repeatedly and cook on a slow heat for 15-20 minutes
  14. Serve with salsa, tortillas, sour cream and guacamole
  15. Stir
