Chicken Fajitas
- For spice mix
- 3 Tbsp. cornstarch
- 2 Tbsp. chili powder
- 1 Tbsp. salt
- 1 Tbsp. paprika
- 1 Tbsp. sugar
- 2-1/2 tsp. crushed chicken bouillon cube
- 1-1/2 tsp. onion powder
- 1/2 tsp. garlic powder
- 1/2 tsp cayenne pepper
- 1/4 tsp. crushed red pepper flakes
- 1/2 tsp. cumin
- For salsa
- 4 ripe Vine Tomatoes
- 1/4 large Onion
- 1 heaped teaspoon Tomato Puree
- 1 level teaspoon Sugar
- 1 tablespoon Olive Oil
- 1 clove Garlic
- 1 teaspoon Coriander (leaves)
- 1 tablespoon Lime Juice
- 1 teaspoon Italian Seasoning (Oregano, Basil, Dried Red Pepper, Marjoram, Thyme, Rosemary, Sage, Parsley)
- 1 level teaspoon English Mustard
- Good pinch of Salt and Black pepper
- For tortillas
- 1lb chicken breast
- Tortillas
- Peppers (1 1/2)
- 1 onion
- For spice mix
- Mix all ingredients in a bowl. Sufficient for 3 meals.
- For salsa
- Prepare the tomatoes by carefully cutting around the green stalk base and removing it. Now pull the loose skin, it will peel without much effort.
- Chop the Onion and grate the Garlic clove into a bowl, add the peeled Tomatoes.
- Mash contents of bowl with potato masher
- Add rest of ingredients. Stir.
- The meal
- Fry off chopped onion and peppers in a pan for 10 minutes.
- Add 1lb diced chicken breast
- Brown off chicken
- Add spice mix
- Stir repeatedly and cook on a slow heat for 15-20 minutes
- Serve with salsa, tortillas, sour cream and guacamole
- Stir
