Sesame Noodles
- 2 TBS sesame seeds
- 6-8 scallions or one minced, large onion
- 4 TBS rice vinegar
- 1/2 c. peanut butter, smooth
- 2 TBS honey mustard
- 4 TBS soy sauce
- 1 TBS hot oil or hot chili sauce
- 2/3 c. dark sesame oil
- 1/2 c. veg. oil
- juice of an orange
- S & P to taste
- 8 ozs. angel hair spaghetti broken into quarters**
- minced red and/or yellow pepper
- ** Personally I prefer using Raman noodles, but it is of course, up to you.
- Boil pasta for just a few minutes (al dente), rinse and add sauce slowly. You don't want the pasta swimming in the sauce; just covered with sauce. Add minced scallions/onions
- Roast sesame seeds over hot dry skillet (fry pan) until brown. Watch out they turn quickly when they turn.
- Sprinkle minced red and yellow peppers and a sprinkling of sesame seeds on top before serving.
