Patti'S Bean Soup
- 7 ounce Turkey Kielbasa sliced
- 1/4 teaspoon red pepper flakes
- 1 cup onion chopped
- 2 garlic minced
- 1 cup carrots, thinly sliced
- 5 cups chicken broth, low sodium
- 1/2 teaspoon italian seasoning
- 1/2 teaspoon pepper
- 2 cans Great Northern beans, drained and rinsed
- 2 cans tomatos canned, diced
- 1 bag baby spinach 6 oz
- cut sasuage into slices and saute, when cooked, take out of pan and set aside. Add oil and saute red pepper flakes and onion, 5 minutes.
- Add garlic and carrots and cook 5 minutes, add chicken broth, sausage, beans ,tomatoes and spices. Bring to a boil and reduce heat. Cook for 20-25 minutes.
- Take two cups out and blend, then return to the pot. Serve with crusty bread.
