Spicy Red Pepper Pasta
- 1 onion, chopped
- 3 cloves garlic, chopped
- 2 red bell peppers, seeded and diced
- 1 can vegetable broth
- 1 pint heavy (or light, but add about 1 1/2 pints) whipping cream
- 2 cans diced tomatoes
- 1C frozen peas
- 1 lb shaped pasta
- 1t basil
- 1t oregano
- 2-3t cayenne pepper (I use a little more than 1T but its hot)

- Saute peppers for about 5 minutes, until a little tender. Then add onions and garlic. Saute until translucent. Add broth, cream and diced tomatoes. Stir and add spices. Let simmer until sauce thickens. Boil water and cook pasta. Add frozen peas to boiling water about 2 minutes before pasta is done. Strain and coat with sauce. Top with ground pepper and grated parmesan cheese if desired.
