Vegetable-Cheese Bake
- 2 (10 oz. each) pkg. frozen mixed vegetables
- 1/2 c. boiling water
- 1/4 c. butter or margarine
- 1/4 c. all-purpose flour
- 1 1/2 c. milk, scalded
- 1/4 c. grated Cheddar cheese
- 3/4 tsp. salt
- 1/4 tsp. black pepper
- 1/2 c. chopped green onions
- 1/4 c. sliced pimento
- In a saucepan combine frozen vegetables and boiling water. Bring to a boil again.
- Cover and simmer 5 minutes.
- Drain well. Meanwhile, melt butter in a sauce pan.
- Blend in flour; cook for 1 minute.
- Gradually stir in milk.
- Simmer, stirring, until smooth and thickened.
- Add cheese and seasonings.
- Mix in vegetables, onions and pimento.
- Spread into buttered 1-quart casserole.
- Bake at 350u0b0 for 30 minutes or until bubbly.
- Good served with baked ham or pork chops.
