Diana'S Oatmeal Cookie Recipe
- 3 1/2 Cups Rolled Oats
- 1 3/4 Cups Unbleached Flour
- 1 1/2 Cups Light Brown Sugar
- 1/4 Cup White Sugar
- 1/2 Teaspoon Baking Soda
- 1/2 Teaspoon Baking Powder
- 1/2 Teaspoon Salt
- 3 Teaspoons Vanilla Extract
- 3/4 Teaspoon Almond Extract
- 1 Teaspoon Pumpkin Pie Spice
- 2 Sticks Butter
- 2 Eggs
- 3-4 Tablespoons Baking Raisins
- 2 Cups Roughly Chopped Walnuts
- Preheat oven to 325 degrees. Mix together butter, light brown sugar, white sugar, vanilla extract, almond extract, and eggs. Blend until creamy. Add flour, baking soda, baking powder, salt, and pumpkin pie spice. Mix well. Add raisins, walnuts, and oats. Take a handful for cookie dough and roll each cookie in loose oats before baking. Place cookies on baking sheet and bake for 10 to 12 minutes. Cookies should be soft, even slightly uncooked, especially in the center, when done. Enjoy!
