Chicken Potatoe Overload
- 2lbs boneless chicken breast cubed
- 8-10 medium potatoes cut in 1/2" cubes
- 1/3 cup olive oil
- 1 1/2 tsp salt
- 1tbsp black pepper
- 1tbsp paprika
- 2tbsp garlic powder
- 6tbsp hot sauce
- Topping
- 2cups fiesta blend cheese
- 1 cup crumbled bacon
- 1 c diced green onions
- Preheat oven to 500 degrees spray 9x13 baking dish with cooking spray in lg bowl mix olive oil salt pepper paprika garlic powder hot sauce add cubed potatoes into prepared baking dish leaving behind as much sauce as possible scoop potatoes and bake them 45-50 minutes stirring every 10-15 minutes until cooked through once potatoes are cooked remove from oven and lower temp to 400 degrees top cooked potatoes with raw marinated chicken with cheese mixture return casserole to oven and cook 15 minutes or until chicken is done and topping is bubbly delicious
