Gold Medal Cookies
- 1 c. light brown sugar
- 1 c. granulated sugar
- 1/2 lb. unsalted butter (room temperature)
- 2 large eggs
- 1 tsp. vanilla
- 3 c. quick cooking oats
- 1 c. + 2 Tbsp. flour
- 1 tsp. baking soda
- 1 tsp. baking powder
- pinch salt
- 1/2 c. wheat germ
- 2 1/2 c. coarsely chopped nuts (pecans or walnuts)
- Heat oven to 350u0b0.
- In a large bowl, combine both sugars and butter until light and fluffy (about 5 minutes).
- Add eggs and vanilla.
- Scrape bottom and sides of bowl and mix to combine ingredients.
- Combine oats, flour, baking soda, baking powder, salt and wheat germ to the butter mixture.
- Mix on low speed just until combined.
- Hand stir/fold in nuts.
- If you have parchment paper (not waxed paper), line cookie sheets.
- Using a small cookie scoop, place them on a cookie sheet.
- Bake for about 15 minutes. If baking two sheets at the same time, rotate 1/2 way through baking time.
- Transfer to a cooling rack when done.
