Oatmeal Cake
- For Cake:
- 1 1/2 cup boiling water
- 1/2 cup butter
- 1 cup quick oatmeal
- 1 cup sugar
- 1 1/2 cup flour
- 1 teaspoon cinnamon
- 1 teaspoon nutmeg
- 2 eggs
- 1 cup brown sugar
- 1/2 teaspoon baking power
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon vanilla
- For Topping:
- 6 tablespoons butter
- 1/4 cup milk
- 1 cup brown sugar
- 1 cup coconut
- 1 cup pecans (chopped)
- 1/2 teaspoon vanilla
- Pour boiling water on to the butter and quick oatmeal. Let stand for 20 minutes.
- Stir all together and bake at 325 for 35 minutes in a 9X13, greased and floured pan.
- For Topping:
- Over medium head, in sauce pan, mix all topping ingredients together, until well mixed and a very slow bubble. Spread on hot cake and place under the broiler for five minutes or until light brown.
