Halibut Bake
- 3 tablespoons Butter
- 1 Shallot; minced
- 1 clove Garlic; minced
- 3/4 cup Panko Bread Crumbs
- 1 teaspoon Fresh Thyme; minced
- 2 tablespoons Fresh Parsley; minced
- 2 tablespoons Mayo
- 1/2 teaspoon Lemon Zest; grated
- 4 pieces Halibut; 1 - 1 1/2" thick, 6-8 oz each
- Place oven rack in middle of oven and preheat to 300 degrees. Set wire rack inside of rimmed baking sheet and spray this with vegetable oil.
- Melt butter in 12" skillet over medium heat. Add shallot and 1/2 tsp. salt and cook till tender, about 3 min. Add garlic and thyme and cook till fragrant, about 30 sec. Add panko and 1/4 tsp. pepper and cook. Stir occasionally till evenly brown, about 5-7 min. Remove from heat and stir in parsley. Transfer to shallow dish to cool, about 10 min.
- Whisk mayo, egg yolk, lemon zest and 1/4 tsp pepper together in bowl. Pat fish dry and spread the mayo mixture on top of Halibut to coat tops. Season with salt and pepper. Now dredge the tops with panko mixture. Press gently to adhere and place on prepared wire rack.
- Bake at 300 degrees till centers are just opaque and fish registers 135 degrees, about 30-40 min.
