Stuffed Zucchini A La Karen

  1. Slice zucchini in half length-wise and hollow out to form 1/4 inch shells. Sprinkle with salt and pepper. Place cut side up on parchment lined baking sheet bake at 375 for 15 minutes.
  2. Chop reserved pulp and add oil, cheese, and parsley.
  3. Put bread, nuts, and onion in blender and pulse into crumbs.
  4. Combine with pulp mixture and add some black pepper.
  5. Fill baked shells and bake for approximately 15 minutes or until tops are browned. May need to increase to 400 the last five minutes.
