Spiced Beef Tenderloin Steaks With Mango Salsa
- Salsa
- 1/2 C hot jalapeno jelly
- 3 TBS fresh line juice
- 2 1/2 C chopped peeled pitted mango
- 1 1/4 C chopped red bell pepper
- 3/4 C chopped red onion
- 1/3 C chopped fresh cilantro
- 1 jalapeno chili, minced
- BEEF
- 1 TBS cinnamon
- 1 TBS ground coriander
- 1 TBS sugar
- 1 TBS paprika
- 1 1/2 tsp salt
- 1/2 tsp cayenne pepper
- 12 4-oz beef tenderloin steaks
- Olive oil
- For Salsa: Whisk jelly and lime juice in a large bowl. Mix in all remaining ingredients. Season to taste with salt and pepper. (Can be made 2 hours ahead. Cover and chill)
- For BEEF: Mix first 6 ingredients in a small bowl. Brush both sides of steaks with oil. Sprinkle 1/2 tsp spice mixture over each side of each steak.
- Prepare BBQ (medium-high heat.) Grill steaks to desired doneness, about 2 minutes per side for medium-rare. Serve, passing salsa separately
