Potato Chip Crusted Tilapia Casserole
- 2 slices bread
- 1 cup potato chips
- Fresh dill
- Cayenne pepper
- 3 tilapia fillets
- 1 tbsp. olive oil
- 1 chopped turkey sausage
- 1 cup brown rice
- 2 1/2 cups chicken broth
- 1 white onion
- 5 cloves garlic
- 1 bell pepper
- Pinch of saffron
- 1 can diced tomatoes
- Fresh cilantro
- Fresh marjoram
- 1 fresh jalapeno
- 1 tbsp. butter
- Juice and zest of lemon
- 1/4 cup Dijon mustard
- 1 can corn
- 1 cup frozen fava beans
- Black pepper
- Pulse bread, potato chips, dill, and cayenne in food processor. Bread tilapia in mixture and refrigerate.
- Heat oil in deep pot for 1 minute. Add sausage and cook for 5 minutes. Chop onion and garlic in food processor. Slice pepper in processor.
- Stir rice into pot. Add broth, onion, garlic, pepper, and saffron. Bring to a boil and simmer, covered, for 30 mins.
- Chop cilantro, marjoram, and jalapenos in processor.
- Stir tomatoes, cilantro, marjoram, and jalapenos into pot. Bring to a boil again and simmer 15 minutes.
- Heat butter in skillet with lemon juice and zest and mustard. Cook fish 5 minutes per side.
- Stir corn and fava beans into rice. Cook on low, covered, for 10 mins. Top with fish and black pepper.
