Mushroom & Sauteed Veggie Rice
- 1/2 cup celery, finely chopped
- 1/2 cup onion, finely chopped
- 1/2 cup green pepper, finely chopped
- 1/2 stick margarine
- 1 cup dry rice (but NOT instant)
- 1/4 teaspoon black pepper
- 1/2 teaspoon red (or cayenne) pepper
- 1/2 teaspoon white pepper
- 1/2 cup mushrooms with one-half of the juice
- 2 cans beef consomme
- Saute celery, onion and green pepper in the margarine. Put this with the dry rice, black, red & white peppers (I sometimes add more than the recipe calls for; others may want to use less as it can get pretty spicy!) and the mushrooms with half the juice into a large casserole dish (any shape works fine). Add the 2 cans beef consomme -stir to mix well. Cover and bake in 300o oven two hours. Stir a couple of times after it starts baking.
