Summit Salad

  1. To prepare vinaigrette, whisk together Dijon mustard, honey, garlic, basil, red wine vinegar, balsamic vinegar, orange juice, and zest.
  2. Add oil in a steady stream.
  3. Roast sunflower seeds in skillet over medium heat until lightly browned and add to dressing.
  4. Season with salt and pepper to taste.
  5. On individual salad plates "compose" salads. Starting with the salad greens, tehn beets, carrots, chickpeas, feta, sprouts and sun-dried tomatoes. Spoon dressing over salads.
