Five Times Three
- 1 cup sliced carrots, cut into 2 x 1/3-inch strips
- 1 cup cut green beans, cut into 2 inch strips
- 1 large red bell pepper, cut into 2 x 1/3-inch strips (about 2 cups)
- 2 cups cauliflower florets, cut into small 1 inch florets
- 1 large onion, sliced into thin strips
- 2-3 cloves of garlic, minced
- 1 inch ginger, grated fresh
- 1/2 cup chopped fresh cilantro
- 2 tablespoons vegetable oil
- 2 Serrano chilies, seeded, minced
- 1/4 teaspoon turmeric
- Salt to taste
- In a large skillet add 2 tablespoons of vegetable oil on high heat. Add the onions and fry for two minutes. Then add the garlic, Serrano chilies, and ginger, and fry for another minute. Now add the carrots, green beans, bell pepper, and cauliflower. Keep stirring all the vegetables on high heat for one more minute. Then add the salt and turmeric and keep on stirring until all the spices have been incorporated with the vegetables. At this point, lower the heat and cover the skillet for 2-5 minutes so that the vegetables are tender. Arrange the stir fried dish on a platter and sprinkle with chopped cilantro.
