Bap Xao (Corn And Scallion Stirfry)
- 1 tbsp olive oil
- 1 1/2 tbsp unsalted butter
- 1/4 cup chopped scallions
- 1 tbsp dried shrimp that has been rinsed in warm water and chopped finely(optional)
- 1 red Thai chile, chopped
- 2 cups fresh corn(cut off the cob)
- 1 tbsp fish sauce
- 1 pinch of salt
- 1. Heat oil and melt butter in a skillet over high heat.
- 2. Add shrimp(optional), scallions, and Thai chile. Cook mixture until scallions are wilted (about 20-30 sec).
- 3. Remove mixture from skillet and set aside leaving behind the oil.
- 4. Add the corn, salt, and fish sauce to the skillet.
- 5. Cook the corn, stirring frequently, until done.
- 6. Add back the scallion mixture and give it a few good stirs.
- 7. At this point taste it and see if its salted to your taste. If necessary add additional fish sauce until desired level of saltiness is achieved.
- 8. Remove from heat and place in serving bowl.
