Turkey Burger On Chibata
- 3 tablespoons olive oil, divided
- 2 cups chopped yellow onion
- 1/2 cup chicken broth
- 1/2 teaspoon dried oregano
- 11/2 lb ground turkey
- 3/4 teaspoon salt
- 1 1/2 cups shredded mozzarella cheese
- 1 1/2 loaves ciabatta bread (about 1 1/2 lb)
- 18 fresh basil leaves
- 6 bottled roasted red pepper halves
- 4 beefsteak tomatoes, sliced
- 3 ripe nectarines, pitted and cut into wedges
- 3 oz fresh mozzarella cheese, thinly sliced
- 1/2 cup torn fresh basil leaves
- 3/4 teaspoon salt,
- 1/4 teaspoon pepper
- 3 tablespoons extra virgin olive oil
- 1 tablespoon balsamic vinegar
- Heat 1 tablespoon oil in a large skillet over medium heat. Add onions; saute 5 minutes. Stir in broth and oregano; cook 20 minutes. Remove onions from skillet. Place turkey in a bowl; add onion mixture and salt. Mix gently just until blended. Shape turkey mixture into 6 patties.
- Add patties to skillet; cook 5 minutes over medium heat. Turn patties; cook 3 minutes longer or until no longer pink. Top patties with cheese; cook just until cheese melts, and remove from skillet. Cut bread into 6 servings. Brush 2 tablespoons
- oil on bread; toast, cut sides down, in skillet. Assemble
- burgers with patties, basil, peppers and desired toppings. Alternate tomatoes, nectarines, cheese slices and basil ona platter. Sprinkle with salt and pepper. Drizzle with oil and vinegar.
