Kentucky Derby Burgoo
- 5 ounces vegetable oil
- 1 large carrot, diced
- 1 large onion, diced
- 1/2 bunch large celery, diced
- 1 pound pulled smoked chicken
- 1 pound diced stew meat
- 1/2 pound chunks of ham
- 2 small cans tomato paste
- 24 ounces V8 juice
- 32 ounces beef stock
- 32 ounces chicken stock
- 24 ounces blended frozen mixed vegetables
- 16 ounces frozen okra
- 4 ounces Worcestershire sauce 3 ounces hot sauce
- 1. In a large 14-quart stock pot, heat vegetable oil on medium to high heat.
- 2. Add celery, onions and carrots. Cook till onions become translucent.
- 3. Add smoked chicken, stew meat, and chunks of ham to vegetables and saute for 5-6 minutes.
- 4. Add the rest of the ingredients and cook on low for about 2 hours.
