Kentucky Derby Burgoo

  1. 1. In a large 14-quart stock pot, heat vegetable oil on medium to high heat.
  2. 2. Add celery, onions and carrots. Cook till onions become translucent.
  3. 3. Add smoked chicken, stew meat, and chunks of ham to vegetables and saute for 5-6 minutes.
  4. 4. Add the rest of the ingredients and cook on low for about 2 hours.
