Meatloaf With Brown Sugar-Ketchup Glaze- Best Recipes
- Glaze:
- 1/2 C ketchup
- 4 T brown sugar
- 4 t cider or white vinegar
- Meatloaf:
- 2 t vegetable oil
- 1 medium onion, chopped
- 2 garlic cloves, minced
- 2 lg eggs
- 1/2 t dried thyme
- 1 t salt
- 1/2 t grd black pepper
- 2 t Dijon
- 2 t Worcestershire
- 1/4 t tabasco
- 1/2 C whole milk or plain yogurt
- 2 lbs meatloaf mix
- 2/3 C crushed saltines OR quick oatmeal OR 1 1/3 C bread crumbs
- 1/3 C parsley, minced
- 6-8 slices bacon
- 1. For glaze, mix all ingredients in a small saucepan and set aside.
- 2. Heat oven to 350.
- 3. Saute onion and garlic in oil about 10 min then set aside to cool.
- 4. Mix eggs through yogurt together. Add to meat, crackers, and parsley.
- 5. Blend with a fork.
- 6. Place on foil-lined pan and shape into loaf. Brush with half of glaze and bacon.
- 7. Bake until internal temp. is 160- about 1 1/2 hr. Cool 20 min. before serving.
- 8. Simmer glaze until thickened slightly.
