Spinach Pie

  1. Pie crust:
  2. Pre-heat the oven to 450 F
  3. Mix together the flour and shortening. Add water until the dough is slightly sticky (you can add more flour if you put too much water in). Roll out the dough on a floured board into a round shape large enough to fit into your pie plate. Place the dough into the pie plate and then prick the dough to prevent uneven rising.
  4. Bake for 12 minutes.
  5. Filling:
  6. Preheat the oven to 300 F.
  7. Saute the onion in olive oil (you can also add garlic if wanted) until translucent.
  8. Add the spinach and cook until all of the spinach is wilted.
  9. Remove from heat and add the feta, dill and eggs.
  10. Pour the filling into the pie crust and bake for 30 minutes.
