Chipolte Grilled Chicken Salad
- 4 chicken Breasts marinated in Mrs Dash's chipole 10 min Marniade.
- Reserve about 1/4 c for later use with dressing.
- 1 1/2 C low fat or non fat ranch dressing.
- 4C of mix greens
- 1/2 of large purple onion
- 5-6 roma tomatoes sliced
- 1 large avocado
- 1 med can of sliced black olives
- 1/2 of large cucumber sliced
- 1 can of whole kernel corn drained
- salt and pepper to taste
- Grill 4 chicken breast that have been marnitated in Ms. Dash's Chipolte 10 min marinade. I use the extra sauce to baste while grilling.
- Toss salad and add all of the rest of the ingredients. Take the 1/4 c of marinade and add to 1 1/2c of ranch low or no fat dressing.
- Place chicken breast on top if greens and enjoy. Top with dressing.
