Tilapia Southeast Asian Style
- 2 lb Tilapia fillets
- 1/4 Wondra flour (fine milled)
- dash salt
- dash pepper
- 2 bunches of scallions, finely slices (white and light green part only)
- 2 in. piece of ginger, peeled andfinely chopped
- 1 teaspoon chopped garlic
- 1 red pepper, finely chopped
- 2 Tablespoons peanut oil, separataed
- 2 tsp. sesame oil, separated
- 3 Tablespoons soy sauce
- 3 Tablespoons lime juice
- 1/2 cup lite coconut milk
- cilantro sprigs for garnish (optional)
- In a large skillet or wok, heat one Tbsp peanut oil and one tsp sesame oil on high heat. Add scallions and ginger. Stir fry one minute. Add garlic and red pepper and stir fry 3 minutes more. Remove vegetables from skillet.
- Dredge fish fillets in Wondra flour. Salt and pepper fillets lightly.
- Add 1 Tbsp peanut oil and 1 tsp sesame oil to skillet. Pan sear fish fillets till just cooked through...about 2 minutes per side.
- Add soy sauce, lime juice, and cococut milk to skillet. Add vegetables. Cook until sauce is a bit thickened and fish is cooked through.
