Tilapia Southeast Asian Style

  1. In a large skillet or wok, heat one Tbsp peanut oil and one tsp sesame oil on high heat. Add scallions and ginger. Stir fry one minute. Add garlic and red pepper and stir fry 3 minutes more. Remove vegetables from skillet.
  2. Dredge fish fillets in Wondra flour. Salt and pepper fillets lightly.
  3. Add 1 Tbsp peanut oil and 1 tsp sesame oil to skillet. Pan sear fish fillets till just cooked through...about 2 minutes per side.
  4. Add soy sauce, lime juice, and cococut milk to skillet. Add vegetables. Cook until sauce is a bit thickened and fish is cooked through.
