Chicken, Broccoli, Blue Cheese Salad
- 1/2 cup reduced fat mayonnaise
- 1/2 cup light sour cream
- 2 tsp sugar
- 2 tsp cider vinegar
- Dash garlic powder
- Cracked black pepper
- 1/3rd tsp sea salt
- 1 tbsp Worchester sauce
- 6 chicken breast tenderloins, poached and diced
- 1 bag broccoli flowerettes,blanched and cooled
- 1/2 c seedless red grapes, sliced in half
- 1 apple, diced
- 1/4 c red onion, diced
- 1/3rd c blanched toasted almonds, chopped
- 4 strips crispy cooked bacon, cooked and crumbled
- 6 oz crumbled blue cheese, crumbled
- Make dressing by combining mayo, sour cream, garlic powder, black pepper, sea salt, Worchester sauce in a large bowl until smooth and sugar is dissolved.
- Add chicken through blue cheese and gently stir to coat. Refrigerate for 30 minutes to 2 hours, then serve.
