Easy Italian Sausage With Pasta
- 1 28 oz. can diced tomatoes in juice
- 8 oz. rotini (half a box)
- one med. onion diced
- 1/4 cup sundried tomatoes in oil julienned
- three turkey italian sausages (sweet or hot) with casings removed.
- one clove or garlic (or more to taste), finely diced or put thru press
- olive oil
- oregano
- salt and pepper
- romano or parmesan cheese grated
- In large pot start water for pasta. When boiling add salt and pasta and cook until al dente. While pasta is cooking heat 1 Tbs of oil in large fry pan, break up sausage in pan and saute until cooked thru. Add onion and garlic and saute briefly. Add can of diced tomatoes(including liquid) and sundried tomatoes (you can also add some of the flavored oil from sundried tomatoes--about 1 Tbs.)Add about 1 tsp of oregano and salt and pepper to taste. Cover and let this mixture cook on low heat for 5 minutes.
- When pasta is done, drain and add to tomato mixture. Cook over medium heat for about 1 minute (or let stand for 5 minutes off heat) to allow pasta to absorb sauce. (This gives you time to throw together a salad?!). Serve with grated cheese on top.
