Stir-Fry Vegetables
- 1 Tbsp. oil
- 1 Tbsp. butter
- 3 medium onions, quartered lengthwise
- 1 medium green pepper, cut in 1/4-inch wide strips
- 3 c. thinly sliced cabbage
- 1 c. carrots (3 medium), sliced diagonally
- 1/4 c. (1 bunch) sliced green onions
- 1 c. broccoli flowerets
- 1 c. cauliflower flowerets
- 3 stalks celery, diagonally sliced
- 1/2 c. thinly sliced cooked meat
- 1/2 c. sliced mushrooms
- In 3-quart casserole place oil, butter and onions.
- Microwave, uncovered, at High for 4 minutes until hot.
- Stir in and mix well green pepper, cabbage, carrots, green onions, broccoli, cauliflower and celery.
- Microwave at High, covered, for 4 minutes.
- Add meat and mushrooms and continue to microwave, uncovered for 4 to 6 minutes more.
- Makes 6 to 8 servings.
