Cold Bean Salad
- 1 (1 lb.) can cut green beans, drained
- 1 (1 lb.) red kidney beans, drained
- 1 (1 lb.) garbanzos or chickpeas, drained
- 1/2 c. chopped pimiento
- 1/2 c. chopped onion
- 1 red onion, sliced into thin rings
- 1 c. wine vinegar
- 1/2 c. salad oil
- 1/2 c. sugar
- 2 tsp. salt
- 1/2 tsp. ground black pepper
- In large bowl, combine all beans, pimiento and onion.
- Combine remaining ingredients in small bowl.
- Stir well and pour over bean mixture, tossing gently.
- Cover; refrigerate to chill and blend flavors.
- Stir gently several times before serving (if you remember).
- Can be made day before.
- Makes 10 servings.
- Has appeared at potlucks at campgrounds across the country on our RV travels.
