Cinnamon-Orange Oatmeal Cookies
- 1 c. unsalted sweet butter, room temp
- 1/4 c. vegetable shortening
- zest of 2 large oranges, chopped finely
- 3/4 c. granulated sugar
- 1 c. packed brown sugar
- 2 large eggs
- 2 tsp. good-quality vanilla extract
- 2 c. flour
- 2 1/2 c. rolled oats
- 3/4 c. Thompson raisins
- 1/2 tsp. salt
- 1/2 tsp. baking soda
- 1 heaping tsp. ground cinnamon
- Heat oven to 375. Beat butter and shortening until smooth in a large bowl. Add orange zest and blend to infuse butter mixture with orange flavor. Add brown and granulated sugar and beat until smooth. Add eggs one by one and beat until mixture is light and fluffy. Beat in vanilla extract. In another bowl, combine flour, oats, baking soda, salt, and cinnamon. Add raisins and stir to coat them lightly with flour (so they distribute evenly and don't clump) Gradually add dry ingredients to butter-sugar-egg mixture just until the cookie dough comes together.
- Scoop good tablespoonfuls of dough and flatten a bit into small fat disks and place on ungreased baking sheets (the cookies do not spread very much) Bake until lightly browned (12 min). Let cool a couple minutes then remove from pan to cool completely on wire racks.
