Chili
- 2 lbs lean ground beef
- 2 tablespoons oil
- 1 large chopped onion
- 1 large clove garlic, minced
- 1 green pepper, chopped
- 1 lb can stewed tomatoes
- 1 15oz can V8 or tomato sauce
- 1 small can tomato paste
- 2 1/4 cups water
- 1 teaspoon chili powder
- 1 1/2 teaspoons salt
- pinch of basil
- 1 bay leaf
- 2 tablespoons brown sugar
- Ground cayenne pepper to taste
- 1 10oz can chili beans (do not drain)
- Sautee onion, green pepper, garlic in oil. Add beef and continue cooking until brown. Add all other ingredients except beans, bring to a boil. Reduce heat and simmer gently, uncovered, until sauce thickens - about 1.5 hours. Add beans and serve.
