Fish & Cheese Bake
- 4 8 ounce fish fillets (snapper, tillapia or any firm fish will do) 1/2" thick
- 1/2 Cup fresh unseasoned bread crumbs
- 1 Cup of chopped onions
- 1 Red Bell pepper chopped
- 1/2 Cup of sliced mushrooms of your choice
- 1 Cup grated parmesan cheese
- 1/4 Cup butter (1/2 stick)cut up in to bits
- Salt and pepper to taste
- 1 - 8 ounce package of shredded Cheddar and Monteray Jack cheese mix
- Place chopped onions, mushrooms and peppers in a 13x9 baking dish. Season fish with salt and pepper and place on top of vegetables. Dot fish with butter bits and bake for 12 to 15 minutes uncovered.
- In a bowl mix bread crumbs with shredded cheese and place on top of fish. Broil fish for about 2 minutes or until cheese has browned.
