Cauli-Fried Rice

  1. In wok or lg skillet, heat enough oil to cover the bottom of the pan. Saute garlic and white part of onions for 1 min.
  2. Add grated cauliflower and cook for 4-5 minutes stirring constantly. Add peas and carrots halfway through.
  3. Add soy, ginger and green onion tops . Stirfry for 1 min.
  4. Push all to one side of pan or to outside edges.
  5. Add little bit more oil to empty spot and pour eggs in.
  6. Scramble eggs until set but still moist.
  7. Stirfry all together for 1 min. then remove from heat and enjoy!
