Arugula And Goat Cheese Salad With Fig Vinaigrette
- VINAIGRETTE
- 5 oz fresh figs (6 large), stemmed & quartered
- 1/2 c water
- 1 T fresh lemon juice
- 1 T balsamic vinegar
- 1 T white wine vinegar
- 2 t chopped fresh basil
- Generous pinch sugar
- 2 T extra virgin olive oil
- SALAD
- 8 1/2-inch-thick rounds of goat cheese
- 1 egg, beaten to blend
- 1 cup panko
- 1 T extra virgin olive oil
- 10 C packed arugula
- 3 oz thinly sliced prosciutto
- 8 fresh figs, stemmed & halved
- Honey
- For vinaigrette - combine figs and 1/2 water in medium saucepan. Can't find the rest of the recipe but I'm sure you can figure it out! :)
