Galumpki'S(Ukrainian Stuffed Cabbage)
- 2 large heads green cabbage, cored
- 2 large onions, 1 chopped and 1 diced
- 1 c. salt pork, cubed
- 1 c. salt pork, cut in 1/2 inch chunks
- 3 lb. hamburg (raw)
- 2 c. cooked rice
- 2 medium cloves garlic
- 1 large can stewed tomatoes
- 1 can tomato puree
- Core cabbage, parboil and peel whole leaves off.
- Set aside. In large skillet, saute small cubed salt pork and one large onion (diced) until salt pork is golden brown and onion translucent.
- Put hamburg and rice into bowl; add salt pork and onion mixture and salt and pepper.
- Mix well.
- Roll in cabbage leaves and set aside. In large pot put garlic, 1 large onion (chopped), 1 cup salt pork chunks and 1 can tomato puree, then stack cabbage rolls tight. Dump stewed tomatoes between layers and on top.
- Cover.
- Cook over low heat 3 to 4 hours or until done.
