Kat'S Non-Dairy Coconut Mashed Potatoes

  1. Fill large pot with water and add 2 tablesppons salt. Turn on high heat until boiling, then reduce heat to maintain a medium boil. Prep Potatoes; red potatoes cut off brown spots, russet - peel entire potato. Cut into chunks and place in the pot. Boil potatoes until they are soft when touched with a fork, about 30 minutes. Strain the water out of the potatoes. Then add coconut cream, chicken broth, lemon grass paste, green curry paste, and 1 tablespoon salt (or to taste). Smash together until smooth.
