Sausage Quiche
- 2/3 lb. sausage (hot or mild)
- 1/3 c. onion
- 1/4 c. green pepper
- 1 1/2 c. sharp cheese, grated and mixed with 1 Tbsp. flour
- 1 unbaked pie shell (9-inch)
- 2 eggs, well beaten
- 1 c. evaporated milk
- 3 Tbsp. fresh parsley, cut up (optional)
- 3/4 tsp. seasoned salt or plain salt
- 1/4 tsp. garlic salt
- 1/4 tsp. black pepper
- Use a skillet and a 9-inch unbaked pie shell; bake in a 375u0b0 oven for 35 or 40 minutes.
- Fry the sausage and drain well; cook the onion and pepper in the same skillet, using 2 tablespoons of the sausage fat.
- Combine the sausage, cheese mixture.
- Cool a few minutes.
- Press the mixture into the bottom and the sides of the unbaked pie shell.
- Mix the remaining ingredients well and pour over the first mixture.
- Bake in a 375u0b0 oven for 35 to 40 minutes or until nicely browned and the filling is set.
