Cappuccino Parfait
- 1 pkg. unflavored gelatin
- 2 1/4 c. strong, cold coffee
- 1/4 c. brown sugar
- 1 c. evaporated nonfat milk
- 1 tsp. vanilla
- 2 Tbsp. Kahlua or other coffee flavored liqueur (optional)
- Combine gelatin and 1/2 cup coffee in a small bowl; let stand 1 minute.
- Heat remaining coffee to a simmer in small saucepan. Add gelatin mixture and sugar to hot coffee.
- Cook over low heat, stirring constantly, until gelatin and sugar dissolve.
- Remove from heat; stir in evaporated milk and vanilla.
- Cool.
- Pour into an 8 x 8-inch pan.
- Freeze until almost frozen.
- Spoon mixture into blender or food processor.
- Add liqueur; process until smooth.
- Return to pan; freeze until firm.
- Spoon into parfait glasses; serve immediately.
- Serves 4.
