Cappuccino Parfait

  1. Combine gelatin and 1/2 cup coffee in a small bowl; let stand 1 minute.
  2. Heat remaining coffee to a simmer in small saucepan. Add gelatin mixture and sugar to hot coffee.
  3. Cook over low heat, stirring constantly, until gelatin and sugar dissolve.
  4. Remove from heat; stir in evaporated milk and vanilla.
  5. Cool.
  6. Pour into an 8 x 8-inch pan.
  7. Freeze until almost frozen.
  8. Spoon mixture into blender or food processor.
  9. Add liqueur; process until smooth.
  10. Return to pan; freeze until firm.
  11. Spoon into parfait glasses; serve immediately.
  12. Serves 4.
