Pinkys Italian Soup

  1. Remove Sauage from Casting and brown, breaking apart
  2. In a large pot or Dutch oven put 2 TBS EVOO in bottom and heat, add onion and garlic sautee till translucent.
  3. Add Celery, Carrots and sautee for 5 minutes.
  4. Add Stewed Tomatoes, Broth, Bay leave
  5. When Sausage is browned, drain and add to soup simmering on medium low (Small amount of bubbles) for 30 minutes. Add Beans and hit them through.
  6. Service with sprinkled parmesan and crusty bread.
