Pinkys Italian Soup
- I package of Hot Italian Turkey Sausage
- 1/2 cup Diced Carrot
- 2 Ribs Celeery sliced
- 1/2 onion Yellow or White onion
- 2 Garlic Cloves
- 1 bay lean
- 1 28 oz can stewed italian tomatoes purred
- 2 cups chicken or Vegatable Broth (Low Sodium)
- 1 Can 14 oz Cannelini Beans
- 6 Fresh Bay leaves
- Parmesan Cheese
- Remove Sauage from Casting and brown, breaking apart
- In a large pot or Dutch oven put 2 TBS EVOO in bottom and heat, add onion and garlic sautee till translucent.
- Add Celery, Carrots and sautee for 5 minutes.
- Add Stewed Tomatoes, Broth, Bay leave
- When Sausage is browned, drain and add to soup simmering on medium low (Small amount of bubbles) for 30 minutes. Add Beans and hit them through.
- Service with sprinkled parmesan and crusty bread.
