Tarragon Soy Marinade

  1. Put all ingredients (except meat) into blender, blend and reserve a small amount of marinade for basting or for dressing.
  2. Make three or four long cuts 3/4 of the way to one end of the chicken breasts resulting in a piece resembeling a 3 or four fingered hand. Put meat in marinade and refrigerate for and hour or two ocasionally agitating to cover all the meat.
  3. Grill over a hot fire till done. Rest a few minutes. Slice and serve.
  4. Any left-over meat can be chilled, cut up and mixed with the mayo/marinade dressing to make a great meat salad, adding chopped celery & chopped scallions.
