Favorite Spinach Salad
- 12 slices thick-cut,cooked bacon, chopped and cooled
- 18+ oz fresh spinach leaves, washed and prepped
- 6+ large hard boiled eggs, diced
- 2/3 cup vegetable oil
- 1/3 cup red wine winegar
- 1 Tbsp. lemon juice
- 1 Tbsp. soy sauce
- 2 tsp. sugar
- 2 tsp. dry mustard
- 1 tsp. yellow curry powder
- 1 tsp. salt
- 1/2 tsp. black pepper
- 1/2 tsp. garlic powder
- Cook and prep first 3 ingredients and set aside.
- In a jar (preferably), combine the rest of ingredients and shake well. (this can be done a day ahead, for better flavor).
- When ready to serve, toss spinach in dressing, then top with bacon and chopped egg.
- Tip - if bringing salad to another location, carefully remove yolks from whites, chop whites ahead of time, and hand-crumble yolks when serving salad.
