Chicken Salad With Apples And Nuts

  1. 1.tt least 6 hours prior to grilling...
  2. Pound chicken breasts until 1/2 inch thick or less
  3. Combine 1/4 cup apple juice concentrate, 2 tbs cooking oil, soy sauce, white wine vinegar and savory; add to plastic bag with pounded chicken breasts. Marinate for 6 to 24 hours
  4. 2.tressing: Combine mayonnaise, 3 tablespoons apple juice concentrate, mustard, salt and pepper.
  5. 3.tpiced Nuts: combine pecans, melted butter, cumin, cayenne pepper and salt. Bake at 350 on a cookie sheet for ~10 minutes, stirring once or twice, until brown
  6. 4.trilling: Brush with reserved marinade after turning
  7. 5.tlice chicken diagonally into 1/2 inch strips; arrange over greens in serving bowl; arrange sliced apples over that; top with dressing followed by sprinkling with spiced nuts
