Irish Potato Cake
- 1 c. butter or margarine, softened
- 2 c. sugar
- 2 eggs
- 1 c. cold mashed potatoes
- 1 tsp. vanilla extract
- 2 c. all-purpose flour
- 1/4 c. baking cocoa
- 1 tsp. baking soda
- 1 c. milk
- 1 c. chopped nuts
- In a mixing bowl, cream butter and sugar until fluffy; add eggs, one at a time, beating well after each addition.
- Blend in potatoes and vanilla.
- In a separate bowl, combine flour, cocoa and baking soda and add alternately with milk to potato mixture, blending well after each addition.
- Stir in nuts.
- Pour into a greased 13 x 9 x 2-inch baking pan.
- Bake at 350u0b0 for 40 to 45 minutes or until cake tests done.
- Cool on a wire rack.
- Serve with a dollop of whipped cream or whipped topping on each piece.
